Loco Moco is a favorite dish in Hawaii.

You form hamburger patties and fry them.

In the mean time, make some brown gravy from packages (McCormicks works the best).

Put the cooked the patties over rice.

Fry eggs sunny side up. Place eggs on top of the patties.

Add fried onions if you desire

Cover in brown gravy and enjoy!

Mexican Lasagna –I made using ground beef instead of groud chicken like the recipe called for. It was super easy and very yummy!

3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (14-oz) can stewed tomatoes or fire-roasted chopped tomatoes
1 cup medium heat taco sauce
1 (15-ounce) can black beans, drained
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
4 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Preheat the oven to 425 degrees F.
Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil – twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add stewed tomatoes or fire-roasted chopped tomatoes and taco sauce. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.

Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly.

Asian Chicken Salad
2 T soy sauce
2 T red wine or balsamic vinegar
2 T salad oil
1 T water
2 t sugar
1 minced garlic clove
mix all for the dressing, put in bowl suitable for dipping
Assemble a bed of mixed greens, cucumber slices, grape tomatoes (cut in half) bell, yellow or red pepper slivers and some thinly sliced scallions.
Dip cooked, slivered chicken breast into the dressing then arrange on top of the greens, pour the rest over the top.
serve immediately 4 servings

You can get creative and put the greens on a mound of fried rice sticks, or add melon balls and sliced almonds, etc.

I have made this recipe for over 30 years, I found it in a Family Circle magazine from the 70’s.

My most impressive, not just because I love it , but because everyone I have made it for went coo coo for cocoa puffs over it and insisted on the recipe is chardonnay honey mustard chicken. I got the recipe from the winery my husband works at. Several chefs in the area use nothing but their wine and collaborated a private cook book for the employees featuring recipes that included their wine. It is not only good every time i make it, it seems to only get better.

Spaghetti totally easy and romantic…haha always good when i make every time…Boil some water and add some oil like 2 tablespoons and add some salt like 1 tablespoon or so and let it boil and then add the spaghetti. when its cooked drain it and run through cold water for 30 seconds or so. and then here is my moms twist and secret (which my husband loves) use the same pot you just boiled it in add 2 tablespoons of butter and then throw your pasta back in and add another two tablespoons of butter and let it cook for about two mins on med heat turn off add your sauce and cheese and you will never go back to just boiling spaghetti but shhh don’t tell anyone its a secret

Chicken Curry.
My parent went sailing in the South Pacific and they ate lots of curry. So I said I would try it. I looked at a couple recipes, I didn’t have everything, but I do know how to substitute change up, and still make things blend. My dad says I nailed it every time. And I was just playing. Nothing ever makes it to be left overs, I LIKE LEFT OVERS. 🙂

1. Stove top Peas and carrots
2. Oven made Lasagna
3. Mashed Potatoes with
– melted cheese
– sour cream
– chopped up meat on top

That was the first dish I cooked my neighbour because she always brings delicious food to me..

roasted cornish hens with a peach BBq sauce

lobster – couscous salad

Angus/Wagyu/Kobe carpaccio

baked brie with sundried apricots, port and cashews

cake. nope because I used to cook without a measurement. I learned from the television and my creativity.lol
